Urban Nest Uncoated Titanium Steel Frying Pan
Bare titanium steel. No coating, nothing to scratch off, nothing to replace in two years.
This is the pan for people who have thrown out one flaking non-stick pan too many. There is no coating on this surface — just textured titanium steel. That means you can take it to a hard sear, drag a metal spatula across it, and scrub it properly afterwards, without ever worrying about what is coming off into your food.
Who this pan is for
Choose this one if you sear steak, brown chicken skin, or build a pan sauce from the fond. Uncoated metal gives you the browning that coated pans cannot, because a non-stick surface is specifically designed to stop food gripping — and gripping is what creates crust and flavour.
If you mostly cook eggs and pancakes and want food to slide out with no technique at all, our coated titanium pans will suit you better. This one rewards a little know-how.
How to cook on it
Uncoated pans work on a simple principle: hot pan, then oil, then food. Preheat for a minute or two, add your fat, let it shimmer, then add the food and leave it alone until it releases on its own. Food sticks when the pan is cold or when you move it too early. Get this right and eggs slide out cleanly.

Cooktops
Confirmed for gas and induction. We do not currently list this pan as oven, broiler or dishwasher safe, so please hand wash it and keep it on the hob. We would rather tell you that than guess.
Care
Hand wash with hot water and a normal sponge. Stuck-on food lifts with a soak or a stainless scrubber — you cannot ruin the surface, because there is no surface to ruin. Dry it after washing. A faint bronze tint may appear over time where the pan runs hottest; that is normal for titanium and does not affect cooking.
Not sure which pan you need?
We make five pans in two families — uncoated and coated. Compare all five side by side and pick the one that matches how you actually cook.
