Coated or uncoated — which should I buy?

It is the only decision that really matters; everything else is size. Choose uncoated if you sear meat, cook at high heat, or you are tired of replacing pans whose coating has started to lift. Choose titanium non-stick if you mostly cook eggs, pancakes and weeknight dinners and want food to slide out with no technique at all. Compare all five pans side by side.

Will eggs stick to an uncoated pan?

Not if you preheat. The sequence is: heat the empty pan for a minute or two, add oil or butter, wait for it to shimmer, then add the egg and leave it alone until it releases on its own. Food sticks to cold metal, not hot metal. If you skip the preheat, yes, it will stick.

What size pan do I need?

24cm for one person or for eggs and breakfast. 26–28cm for two. 30–32cm for three to five. 34cm for six or more, or batch cooking. When you are between two sizes, take the larger one — food crowded into a pan steams instead of browning.

Is titanium cookware safe?

Our uncoated pans have nothing applied to the cooking surface at all — there is no coating to break down, flake or transfer to food. Our coated pans are food-grade and PFOA-free. We wrote a longer piece on what the label actually means.

Do these work on induction? Can I put them in the oven?

Yes — all five pans work on induction and gas, and the Hammered Multi-Use Pan also works on electric. We do not currently rate any of these pans as oven, broiler or dishwasher safe, so please hand wash them and keep them on the hob. We would rather tell you that plainly than have you find out the hard way.

How do I look after them?

Uncoated: hand wash in hot water; a stainless scrubber is fine, because there is no coating to protect. Coated: warm water and a soft sponge only — no abrasive powders, no steel wool. Keep coated pans on low to medium heat and never heat them empty; that is what decides whether a coating lasts two years or ten.
