Titanium vs stainless steel: the two uncoated options
An uncoated pan gets hot and stays hot, and nothing on the surface will degrade when it does. That combination is what produces a proper crust on a steak, a genuine fond at the bottom of the pan for deglazing, and the browning that makes a sauce taste like something.
On titanium vs stainless steel specifically, the difference is reactivity. Stainless steel can release small amounts of nickel and chromium, particularly during long acidic cooking. Titanium is close to inert, forming a protective oxide layer that keeps the metal underneath away from your food. If you have a nickel sensitivity, or you cook tomato and wine-based dishes regularly, that difference is worth paying for. If neither applies, stainless steel conducts heat better and costs less, and there is no shame in choosing it.
The honest downside of both is that food sticks if your technique is off. Uncoated pans want to be properly preheated, given enough fat, and left alone long enough for the protein to release on its own. That is a learnable skill, not a defect, but it is a skill.

Titanium non-stick: built for release

Understood that way, these pans do their job well. Eggs slide, delicate fish stays in one piece, pancakes flip cleanly, and washing up takes seconds. For breakfast, for weeknight cooking, and for anyone who does not want to think about pan technique, that is exactly the right trade.
Two constraints come with it. Keep the heat low to medium, because coatings degrade when overheated and preheating an empty pan on high is the fastest way to ruin one. And accept that the coating is a wear item; it will lose its release properties eventually, however carefully you treat it. A coated pan is a consumable, an uncoated pan is closer to permanent.
Ceramic non-stick: the third option
Ceramic coatings are the usual alternative for people who would rather avoid synthetic non-stick entirely. They release well when new and are typically free of PTFE.

Delicate fish
Non-stick, unless you are confident. Skin-on fish in a stainless pan is one of the harder things to do well, and a torn fillet is a real cost.

Cost over the life of the pan

Run that over ten years and a mid-priced uncoated pan is often cheaper than repeatedly replacing a cheap coated one, even though it costs more today. That is not an argument against non-stick, which earns its place through convenience. Soft utensils, moderate heat, no empty preheating, and let the pan cool before washing. Most coating failure is heat damage rather than scratching.
Uncoated pans

Match the pan to what you cook most:
- Mostly eggs, pancakes, fish, quick weeknight meals? Non-stick. You will use it every day and the convenience is the whole point.
- Steaks, browning, pan sauces, anything that wants a crust? Uncoated. Nothing else does this properly.
