Why Does My Non-Stick Pan Smoke?

Nine times out of ten the pan is simply too hot. The tenth time it is the oil. Either way, smoke is a signal worth listening to, because heat is what kills a non-stick coating faster than anything else you can do to it.

What is actually smoking

Three different things can produce smoke, and they need different fixes.

1. The oil has passed its smoke point

Every cooking fat has a temperature at which it starts to break down and smoke. Extra virgin olive oil and butter give up early. Refined oils - sunflower, rapeseed, light olive, avocado - hold on much longer.

If you preheat properly and then add a fat with a low smoke point, it will smoke almost immediately. That is not the pan's fault. Use a refined oil for frying and save the good olive oil and butter for finishing, lower heat, or dressing the food after it leaves the pan.

2. Old residue is burning off

A faint, sour-smelling smoke from an apparently clean pan usually means there is a thin film of polymerised oil on the surface from previous cooking. It builds up invisibly, especially around the sides where you rarely scrub.

Wash the pan properly with warm water, a soft sponge and a little dish soap, paying attention to the sloped sides rather than just the base. If that does not clear it, a soak will.

3. The empty pan got too hot

This is the one that matters. A non-stick pan heated empty climbs in temperature very quickly, because there is no food or liquid absorbing the energy. Left long enough, the coating itself begins to degrade, and that produces smoke and a sharp chemical smell rather than a cooking smell.

If you get that - acrid rather than food-like - take the pan off the heat, open a window, and let it cool on its own. Do not run cold water into it.

The habit that prevents most of it

Non-stick does not want a hot pan. This is the opposite of what people learn from cooking on stainless or cast iron, and it is why so many non-stick pans die young.

Medium heat is enough for eggs, fish, pancakes, vegetables and most weeknight cooking. The whole point of a coated surface is that food releases without needing the fierce heat that would normally stop it sticking. Turning the dial up does not make it work better - it just spends the coating faster.

If you want a hard sear on a steak or want to build a fond for a pan sauce, that is genuinely a job for an uncoated pan. Different tool, different temperature range.

A short checklist

  • Never heat a non-stick pan empty. Oil in first, or food in quickly.

  • Stay on low to medium. If your hob has numbers, you rarely need more than halfway.

  • Use a refined oil for frying. Keep butter and extra virgin olive oil for lower heat.

  • Wash the sides, not just the base. That is where residue hides.

  • Let the pan cool before it meets water. Thermal shock warps bases and stresses coatings.

Is the smoke dangerous?

Smoke from overheated oil is an irritant and unpleasant but not remarkable - it is the same thing that happens in every professional kitchen several times a service. Ventilate and carry on.

Smoke from a coating being overheated is a different matter, and the honest answer is that you should avoid it rather than test how much of it is tolerable. Keep birds out of the kitchen while cooking, since they are far more sensitive to fumes than people are. And treat it as a sign that the pan has been run harder than it should be.

We would rather say that plainly than pretend a coating can be treated like bare metal.

If it keeps happening

A pan that smokes on medium heat with fresh oil and a clean surface is telling you the coating is near the end of its life. There is no repair for that. When it gets there, an uncoated pan is worth considering - it cannot reach this failure mode, because there is nothing on the surface to degrade.
